The winemaking process takes place in the farm's new underground cantina. The cantina is about 400 square metres large and is found near the main farmhouse. You'll also find a small olive orchard that is used for extra virgin olive oil production.

In the near future the farm will have spring and summer coltivations of sunflowers and corn. There will also be more specialized vineyard crops developed for IGT red and white wine production. The red grape varieties consist of Merlot, Cabernet and Sangiovese.

ESSENZIA: I.G.T. Certified Tuscan Red Wine

ESSENZIA comes from careful selection of the best grapes of the estate, cultivated according to the dictates of organic farming, and is made from 60% Sangiovese and Merlot and Cabernet Sauvignon for the remaining 40%. The fermentation time before contact between must and skins long enough to give body and good aging ability of the product. The malolactic fermentation is completed in barrels where the wine rest for about 12 months.

Wine Characteristics:
The resulting wine has a ruby color with good aromatic complexity with notes of vanilla and cocoa oak resulting affinity. The palate has good texture and soft sweet tannins. It goes well with antipasti of cured meats, pasta dishes and tasty red meat.
Serve at 18 ° - 20 ° C.

UMORE: I.G.T. Certified Tuscan Red Wine

I.G.T. Certified Red Tuscan Wine is made from organic San Giovese, Canaiolo and small percentages of Cabernet Sauvignon grapes, which come from 25 year old vineyards, situated in the Val di Cecina hillside.

Wine Characteristics:
Color: deep purple with violet tones.
Fragrance: fresh and fruity with cherry undertones, followed by a delicate scent of violets.
Flavour: at first sip it is pleasantly sapid with balanced and soft tannins that linger gently in your mouth. Serce at 18-20 degrees Celsius.

I.G.T. Certified Tuscan White Wine is made byorganic Vernaccia and Malvasia grapes from vineyards situated on the hillsides of the High Val di Cecina.

Wine Characteristics:
Color: bold straw colored yellow with light green reflections.
Fragrance: fruity with persistent and light floral hints.
Flavour: initially convincing, fresh, high viscosity, medium bodied with pungent undertonesServe at 8 –12 degrees Celsius.
